It's no secret, T is the chef of the family.  But I take pride in being the meal planner.  I do my best to balance nutrition, ease of recipe, and variety within the week.  I usually do a good job gaging how long it will take T to make a recipe and what is within his cooking repertoire.  Sometimes, I fail.
A couple of years ago (probably, I don't know the exact timeline), I put this twice-baked potato on the menu and we never got to eat it.  Actually, we had to go out to eat that night because T didn't make it past  the first few steps of the recipe before getting frustrated and throwing it in the trash.  Hence the note "frustrating" I wrote to remind me not to put it back into the rotation.  Every time I've mentioned twice-baked potato-type recipes since then, T lets me know I am, under no circumstances, allowed to put them on the menu.
I'm not one to be told what I can or can't do!!!  Okay, okay, let's be real...at least after two years of being told no, I finally rebel.  So the Mexi-tato* made it onto the menu this week!  It was time for T to fight his cooking nemesis!!!
T gets in the first punch and gets the "meat" of the potato taken out with the shells still in tact.  This is where the potato "knocked-out" T during the first encounter late 2008/early 2009ish.
Then T was just relentless adding in a fresh jalapeno from my dad's garden!  This potato was going down!
Salsa on top!!!  Nothing technical about it---this was a KNOCK OUT!!!
And the real winner...ME.  I finally get to put potato recipes on the menu!!!  Since I've given up meat for the most part during the week, give this meat-n-potatoes-kind-of-girl her taters'!!!

*T altered the recipe by adding jalapeno and putting salsa on top.  Next time, we decided he would actually layer some salsa in the potato filling.
