Meal Plan Week #11
Sunday: Salmon, Asparagus, and Orzo Salad with Lemon-Dill Vinaigrette
A pretty simple, yet sophisticated meal--but I sure did make a mess in the kitchen preparing it (of course, if you ask A, that wouldn't distinguish this from any other meal I prepare!) . . . an aside: the more we use it, the more we like orzo has an alternative starch.
Monday: Leftover salad
This is a winning dish, pure and simple. The green chili pork concoction would be great on its own, but encasing it in an enchilada provided it some extra--cheesy--goodness!
Wednesday: Sobre mesa at La Margarita Home sick
Thursday: Irish Colcannon and Thyme Leaf Soup--Happy St. Patrick's Day!! Leftover enchiladas (even the Irish would love these enchiladas!)
Friday: Leftover enchiladas Happy Hour with T's office . . . followed by sushi
Saturday (breakfast): Biscuits and bacon Impromptu trip to New Orleans to see J&J, et al.
Saturday (dinner): Date night out See above

Monday: Frozen pizza/go to the grocery store
Tuesday: Irish Colcannon and Thyme Leaf Soup
Wednesday: Slow-Cooker Green Chile Pork Enchiladas (using leftover pork mixture from last week, which we froze)
Thursday: Pasta with Prosciutto and Spinach
Friday: Herb Sauce Pizza Bagels
Saturday (breakfast): Biscuits and bacon
Saturday (dinner): Date night in

T: Irish stew
**It came to my attention today, as I was tasked with the meal planning this week, that our lives have gotten in the way of some planned meals. So, in an effort not to overlook some potential winners, we are going back to revisit some meals we planned--some of which showed up on this blog--but never got around to preparing . . .
