Supper Sundays (21 & 22/52)

You all All two of you may have been concerned since the date of our last post was May 19th, two days before the scheduled rapture (don't worry, if we had made the cut, you would have too), but thankfully we get to continue to blog--at least in this world--until October 21st.  Shout-out to D.A.D. for sincerely being concerned; not the rapture bit, but our lack of blog activity.

The truth: Moving and a lack of internet have taken their toll on this blog Supper Sunday.

But we are here to report on the meager--but not at all bad--fare we have had cooked recently (really not sure when to be honest . . . ) and to report that we have a menu for the week coming up.  While this blog is about to change (more on that soon from A.), Supper Sunday will remain a constant!

Meals cooked during the course of Weeks 20 & 21


Broiled tilapia with Thai coconut curry sauce:
Another solid Asian dish, which is typically pretty hard to do at home.  I (T.) thought this was one of the best things we have attempted at home.  (A. thought that was a stretch.  Maybe that was because she couldn't put salsa on it it wasn't Mexican-based.)  But we both agreed that this was a repeatable dish.

Refried bean poblanos with cheese:
 We don't repeat many dishes.  But this one is becoming a regular.  The ease and the taste make it too easy to not keep it in the rotation.  (And we know that some of you at home are fans of this one too!)

Crock Pot "Baked" Potatoes:
I HATE baked potatoes in the microwave.  Disgusting.  And the oven takes too long (and heats up the kitchen; something that is even worse in the summer).  Why didn't I think to put these suckers in the crock pot before someone else (who is probably making money off their blog and this simple yet genius idea) pointed it out.

Meal Plan Week #22
Saturday:  Grilled Flank Steak with Tomatoes, Red Onion, and BalsamicWhite Peach Sangria
Sunday:  Toasted Chickpea and Apricot Salad
Monday:  Mexican Slow Cooker Pork Carnitas
Tuesday:  Leftover carnitas
Wednesday:  Pasta with Cauliflower
Thursday:  Leftover pasta
Friday:  Happy Hour + Frozen Pizza!

Predictions--
A: Carnitas
T: Flank Steak

A note on the kitchen "upgrade" . . .   Cue the theme from The Jeffersons . . .
How in the world we STUFFED all of this . . .

Into this . . .

is beyond me.  But I, literally, could sleep in our new pantry!  Or dance in it . . . like George Jefferson, of course--
