Supper Sundays (24-27/52)

So, yeah, it's been a while since we did one of these.  But let's not focus on that, and instead, just pick ourselves up, dust ourselves off, and get on with it . . .

Stuff we have cooked and eaten in the past three weeks or so . . . 

Burgers with Blue Cheese Mayo and Sherry Vidalia Onions
Before moving to Mobile, I could count on one hand how many burgers I ate in a year.  Now it seems we've become quite the burger eaters and this one was definitely a winner in our book.  

Zucchini-Goat Cheese Pizza
 Unlike burgers, there is no way I could count on both hands and toes how much pizza I eat in a year.  So being the pizza expert I am, I can guarantee this was another winner!  Plus, we've really enjoyed cooking with zucchini lately and this was another way to incorporate it into dinner.

Roasted Snapper Tilapia Fillet
While I think the intent behind this recipe (and its use of snapper) was to focus on sustainable seafood, we couldn't find snapper at the grocery store and had to resort to our go-to fish--tilapia, which worked out well.  The preparation was painless, and the finished product tasted great.  We dressed it up with a side of arugula tossed in a simple lemon vinaigrette.

Asian Turkey Meatballs With Lime Sesame Dipping Sauce
I saw this recipe linked up to in a blog I read and I instantly wanted T to make this for us.  Then I started looking around the site at all the other recipes and fell in love.  Right now this is our go-to place for meal planning.  As a consequence, it took us a while to get around to making these meatballs.  Sadly, I actually didn't care for these too much.  There was way too much cilantro in it for me.  Otherwise, it was great but I just could not get over the cilantro.  Oh well, at least we found a great new recipe site.

Hashbrown-Egg White-Nests
 Umm, yum.  This was a great breakfast.  They tasted great and I love how you make them in a muffin pan so you get individual portions instead of making a huge casserole.  As a matter of fact, we're making these again this week and just changing out some of the ingredients to give it a different taste.  Y'all know we must like it because we rarely repeat recipes.

 I already posted the link to this on Facebook.  We loved it. and based off comments y'all left on FB some of you are now enjoying the site we found this on!  Yay for being able to share awesome internet finds!

Chicken Tikka Masala
One of our good friends in Mobile had a dinner party at his home and served us a really yummy chicken tikka masala, complete with homemade naan.  Our attempt at this dish was not so elaborate--i.e., instead of naan, we served ours with Uncle Ben's boiling bag rice!  But the dish turned out great, and had a nice balance of spice (we tend to err on the side of too much spice--and the word "balance" does not usually appear in our cooking lexicon).  As you may now from a prior post, this was our anniversary dinner.  And if you had told me four years ago that I would be cooking a meal in for a special occasion, instead of going out, I would have told you that you're crazy . . . I guess we have either grown up or are just getting old.

Saturday:  Goat-Cheese Arugula Bruschetta and Baked Jalapeno Poppers
Sunday:  Hopjacks + Dinner Out
Friday:  Leftover ziti
Saturday breakfast:  Hashbrown-Egg White-Nests (variation)

T:  Quesadilla

ssssssssigh. I love the food posts. Seriously. I'm going to commit to cooking at least one of these this week. The pizza? the fish? weeeeee!!!

snapper's not sustainable, it's just local to the Gulf Coast.

Thanks for clarifying! We wrote quickly, which resulted in us writing it incorrectly, and didn't explain the original link. The original recipe blogger, I believe, was trying to draw attention to sustainable seafood, even though she used snapper. Sorry for the confusion and wrong information. We always appreciate the feedback!
