Supper Sunday (37 & 38/52)


Meal Plan Week #36
Sunday:  Dinner out-Blind Mule
Monday:  Vegetarian Moussaka
This is, admittedly, not the most appetizing dish for the eyes!  But it makes up for it in flavor .  . . and  the fact that using bulgar both "packs in the fiber," and moreover, makes up for the lack of ground beef or lamb.  It also made plenty of leftovers and was not bad the next day (not a "better the next day" dish, but satisfying nonetheless).

Tuesday:  Leftovers
Yes, this does share its green hue with the guacamole your grandmother used to make (or at least ours used to make--maybe too much sour cream? [and who puts sour cream in guac anyway?]).  But it tasted great.  And I think you could even do this without the crab toping... if lump crab is not your thing from a dietary or monetary standpoint.  (I'd include the red pepper regardless . . . and call it light green Christmas soup?)

Thursday:  Leftovers  Dinner Out (not enough soup for leftovers)
Friday:  Crockpot Carolina-Style BBQ Pulled Pork Sandwiches
A. was craving Carolina-style pork . . . really, she was craving the Carolina-style pork we used to get at this Halloween party . . . but without a smoker, I could only do so much.  Anyway, through the joys of google I was able to bring together the disjointed ideas of a crockpot and Carolina-style pulled pork, and it worked.  To do this right, however, you probably need to also make slaw.  But this was a midweek meal, and we didn't have the time.


Saturday am:  Breakfast Pizza (our own spiced up version of course)

This, my friends, will become a breakfast staple!  Nuff said!  But I will add that we did modify the recipe to our taste by: (1) using spicy sausage, (2) adding a chopped fresh jalapeno, and--because we didn't have a pizza pie pan--(3) using a smaller, regular pie pan, making the dish more deep dish/Chicago-style.  (And we had leftovers for Sunday morning!  Bonus!)

Yep, this was a pretty easy winner to predict.  But I have to say, while we do not normally count breakfast, this week's breakfast pizza was as good as any dinner!

A Little Lagniappe  (Only meal we cooked in Week #37)
Antipasto-Style Penne
A very easy dish to throw together . . . and this was much better cold, served the next day.  Basically, this would be a very good make-ahead cold salad to serve at a potluck.

Sunday:  Dinner Out
Monday:  Frozen Pizza/Grocery Store
Tuesday:  Corn, Chayote, and Green Chile Burritos
Wednesday:  Chickpea Chili
Thursday:  Leftover chili
Friday:  Shredded Beer-Braised Pork Soft Tacos (Sobre Mesa Anniversary Celebration!)
