Supper Sunday (41/52)

Meal Plan Week #40
Sunday:  Walnut-Stuffed Eggplant
This dish fast became one of A.'s favorite eggplant dishes . . . I am not sure how to take that since she doesn't really like eggplant (yet, she does humor my fascination with this sometimes difficult to deal with ingredient).  Regardless, what made this one so good was, since we had to leave the skin on it, salting the eggplant.  We also used pecans instead of walnuts since we had some of those sitting around the pantry.

Monday:  Leftovers
Tuesday:  Three-Cheese Zucchini Lasagna  The Bull
Wednesday:  Leftovers  Bike Shop
Thursday:  Chinese Chicken and Persimmon Lettuce Wraps  Three-Cheese Zucchini Lasagna
We picked up some really nice zucchini at the market and found a pretty good (and filling) way to use it.  The recipe called for frozen spinach (a lot of recipes we use do).  And I have a confession . . . I am tired of using that stuff.  I honestly do not see what it adds.  But I digress.  This was good, and the leftovers came in handy for lunches (see below).

Friday:  Leftovers  Royal Scam  (folks, it was a rough week at work; fun, but busy!)
Lunches (Tuesday & Wednesday):  Summer Squash Soup
Not sure what provoked me to voluntarily take on some extra cooking this past week . . . oh yeah, it was because we picked up one too many vegetables at the market . . . the yellow squash just looked too good (especially compared with the lousy ones we normally find at the grocery store).  Anyway, this was a good--very simple--recipe.  It was very filling.  And it came in handy for me this past week because, instead of my usual "1.5 hour" lunch hour, I had 20 minutes!

Saturday Sunday breakfast:  Chorizo and Egg White Breakfast Burrito
Very solid, very filling recipe.  Fresh Market had some really nice chorizo.  We added jalapenos.  And we were running short on egg whites, so I chunked in whole eggs, yolks and all.  Nuff said.

And as a bonus, we made this on Saturday . . . "Fall" or Honeycrisp Apple Sangria, in honor of BayFest . . .

And, how about this?  An extra bonus from our trip to Tuscaloosa a few weeks back (since it was Alabama's homecoming this past weekend) . . .


Prediction?
